The written history of Spanish Gastronomy dates back to the 15th century, although there had previously been some occasional mention of cooking in some of the works that defined the Universal Spanish Literature.

Gastronomy by regions

Tasty, healthy, traditional, creative, varied… Spanish gastronomy has a lot of adjectives, and all of them are true.

And why is Spanish gastronomy so special? Well, because it can be discovered in tapas, because it can be enjoyed in popular restaurants and in haute cuisine elaborations… There are a lot of ways to make magic in a Spanish kitchen, and it is difficult to find one single recipe that is an exact replica of another.

Spain’s gastronomy is famous all over the world, as shown by the international recognition of its chefs. It is also healthy and an example of the Mediterranean diet.

Olive oil is the star ingredient; Iberian ham, a national pride; and Spanish wines, the ideal accompaniment for a toast. Rioja is the most international Spanish wine, but you will discover options to add to your wine cellar throughout the country.

Basque Country

For many years, Basque cuisine has been considered one of the best in Spain. That being said, nowadays, there are two different Basque cuisines.

The traditional Basque cuisine is rich in raw materials and excellent meats, fish, and stews with succulent desserts… And everything in abundant portions, if that wasn’t clear enough.

This is an extraordinarily and sophisticated cuisine, with roots in the rich traditional gastronomy, but innovative in every sense of the word.

A revolution started by Arzak decades ago and that currently has young masters and leaders between their ranks, such as Martín Berasategui, among others.

La Rioja

La Rioja cuisine is full of rich culinary tradition. Among the most representative dishes or recipes of this cuisine are potatoes with chorizo; lamb’s trotters; red beans (which here are called ”caparrones”, with chorizo and pig ear.

There’s also a very special dish called in the houses and restaurants of La Rioja as “la fritada”, which consists of different vegetables fried with olive oil. Also, typical are the piquillo peppers, some that are very hot, and some that are sweet. We could not forget its excellent wines.

Navarra

Pamplona is a meeting of the genuinely Basque cuisine of the north and that of the south, more acclimatized to the production of vegetables and other products of unsurpassable quality.

Navarrese cuisine has dishes whose fame transcends all Spanish regions: txistorras, pochas (beans), cod with ajoarriero, etc. Some foods are of superior gastronomic excellence: Rocal and Idiazabal cheeses, Piquillo de Lodosa, asparagus, artichokes, veal, etc.

Catalonia

Catalan cuisine boasts a rich past of culinary traditions and a present that places it at the top of world cuisine. It is part of the healthiest Mediterranean cuisine, and its diversification and richness place it among one of the main references of Mediterranean cuisine of all Europe, above France or Italy.

Between its delicacies, we can find unique dishes and complements like:

  • The basic sauces: picada, which is used in almost all its stews, sofrito and all i oil (garlic-oil). Its condiments: saffron, cinnamon and chocolate.

  • The famous Catalan calçots.

  • A tradition of rice,

  • Meat and seafood dishes,

  • Excellent and unique sausages,

  • Dishes such as escalibada, empedrat, calçots,

  • The rich rabbit in a thousand ways, fesols, mushrooms…

And, also, give way to the sublime creations of Ferrán Adrià (El Bulli), Santi Santa María (Can Fabes), among other brilliant and geniuses of the most current restoration.

Toghether with the Roca brothers, in Girona, Catalonia is, indeed, one of the places with the best cuisine in the world.

Valencia

Valencian’s cuisine is often associated with paella… But its popular gastronomy has surpassed this popular dish. The richness of the Valencian orchard, the diversity of Valencian lands, inland, with influences from Aragonese or Castilian-La Mancha, not to mention Catalonia, make up a very rich culinary legacy.

Murcia

There are two cuisines within the Murcian cuisine. That of the interior (within this the one of dry land and the one of the Murcian orchard) and that of the coast. In such a small space, the richness and variety is extraordinary. It must be admitted that the Murcian cuisine is not sufficiently known, but, in fairness, it is one of the best in Spain.

On the coast, the Mar Menor is a very singular space, with species and products that provide a unique gastronomy within the richness of the Spanish Mediterranean.

To this we must add the unequaled tradition of the orchard of Murcia, with vegetables that dispute the leadership of Navarre and summer fruits in the dry land, unique in the whole planet.

Some typical dishes that we can mention are the zarangollo, the Murcian salad, the paparajotes, the marineras, the michirones or the meat pie.

If true that there are far more variations in the Spanish gastronomy, there’s no doubt that, among all of them, the ones that we have explained here are the most important and complex ones.

Besides food, sauces, and other key ingredients, Spain is also known for their excellence in wine and wine routes, something that cannot be experienced in any other place in the entire world, making it the country where cuisine has found its place.
