My story is born between pots, being already the 4th generation in my family of stews , with origin in the Beti Jai of Aoiz. I began training for 5 years at the San Sebastian Cooking School and continued my training and experience in different places such as Chicago, France, the 1992 Expo in Seville, Sant Feliu de Guixols in Girona…

My world in rice dishes began in La Mar Salada, continuing with the Cocotte Taberna. All this journey has served me to fulfill a dream, to translate my way of understanding cooking into a physical space, where I have painstakingly created “Martín’s Spoon” which has different areas to enjoy our cuisine.
