Matías Gorrotxategui has managed to maintain his establishment in Tolosa as an indisputable hotel reference, famous for the quality of its dishes, especially the chop and peppers. Today, his three sons Iñaki and Mikel (in the Julián de Tolosa Restaurant, in Madrid) and Xabi (in Tolosa) continue the tradition of roasting, using the technique that their father has passed on to them.
