Our work philosophy focuses on the use of seasonal, sustainable raw materials and on revaluing forgotten products. We relate mainly to small producers who share our values, who visit markets, to provide us with fresh products of the highest quality day by day. Our sommelier's cellar shares the same philosophy; covering different countries of the world, concentrating on whether its production method is biological or biodynamic.
